Gluten-Free Penne Vodka

Butter + Heavy Cream Free!

Gluten-Free Penne Vodka (Butter + Heavy Cream Free)

You wouldn’t believe the sauce is made with almonds for extra creaminess! The recipe can easily be made dairy free, just substitute equal parts nutritional yeast for parmesan.

▫️Ingredients

-28 ounce can crushed tomatoes

-1/2 cup whole almonds

-1 cup vodka

-1 onion

-1 cup water

-1 cup grated parmesan

-2 tbsp extra virgin olive oil

-1 tbsp minced garlic

-1 tsp crushed red pepper flakes

-pinch of sea salt

Puree almonds and water until smooth, ~1 min. It should be a a cream consistency, add water to thin if needed. set aside. Dice onion, set aside. add EVOO, onion, and garlic to large skillet over medium-low heat, cook until soft and fragrant ~5 mins. Add vodka, cook for ~5 mins. Stir in tomatoes, lower heat and simmer for ~30 mins, stir consistently. Stir in the almond mixture, then stir in the parmesan cheese. Simmer and stir for another 30 mins. Pour over gluten free penne.
